Chinese Chicken Salad Marinate a boneless, skinless chicken breast (6 to 9 ounces) inHarpo's Oriental Dressing for 1-2 hours in the refrigerator Grill the chicken breast then let cool in refrigerator Slice chicken breast into thin strips Chop approximately 1 quart salad into a cole slaw cut; put salad in large bowl Add: 1/8 cup chopped cilantro 1/2 cup bean sprouts 1/8 cup chopped green onion 1/8 cup won ton strips (best to find fresh and fry in peanut oil) Chicken strips 1/4 cup Harpo's Oriental Dressing Toss all ingredients with tongs Garnish salad with 1/16 cup chopped green onions and 1/8 cup chopped unsalted peanuts Grilled Oriental Chicken Marinate 8-12 boneless skinless chicken thighs in Harpo's Oriental Dressing in refrigerator 3-4 hoursGrill chicken thighs Serve on a bed of white or brown rice. Angel Hair Pasta Serves Two: Marinate two chicken breasts in Harpo's Oriental dressing overnight in the refrigerator. Grill the chicken. when cooked cut into thin strips Dice one quarter cup of onions Trim 2 cups broccoli tops Saute onions Cook approximately one pound of angel hair pasta When pasta is aldente drain pasta thoroughly and toss with broccoli, onions and chicken strips (you may prefer to add extra virgin olive oil or butter to pasta when tossing) Serve Thanks to Kathleen in Delray Beach, Florida for this recipe Vietnamese Cucumber Salad 2 medium cucumbers, julienned 2 small chili peppers, chopped 2 tablespoons fresh lime juice 2 tablespoons fish sauce 2 cloves garlic, pressed or minced (optional) 4-6 cherry tomatoes, cut in quarters 2 tablespoons of Harpo's Oriental dressing 1/4 teaspoon of black pepper dash of salt Using mortar and pestle, mix chili peppers and tomatoes. Add lime juice, fish sauce, garlic, dressing and salt and pepper. Mix well. Add cucumbers last and toss lightly. Serve chilled. 2 servings.
